The only parrots I have experience with is quakers. I am thinking about getting a 10 year old female DYH Amazon. What do I need to know before adopting Daisy?

Plenty. I'd suggest doing an online search for Double Yellow-headed Amazon parrots. There's lots of information that will come up in your search results, and much of it should be of some help to you.
In general, DYHAs are friendly, talkative, stubborn, feisty, sometimes loud (they can be much louder than a QP) and messy. Amazons typically have a good sense of humor and aren't usually picky eaters.

Amazons are also moody and can be happy and wanting scritches one min and tearing chunks out of your arm the next. You have to REALLY pay attention to their body language. I had a blue front, he was funny, quirky, silly, was the best talking bird I've ever had, but I have scars from his bite on my arm to this day.
Like Dani says, do your research!!!!
Amazons are also prone to fatty liver disease, like quakers, and need to be on healthy, pelleted diet, fresh veggies and fruit and need to be given lots of opportunity for exercise. A good way to set up an Amazon's cage is to put all their food and water dishes on different levels, in opposite corners of the cage so they are forced to climb around to get at them.

IRNs are very nice birds. Not prone to moodiness like an amazon

I've always been extremely intrigued by IRNs. If I was to get another bird, that would probably be it (not going to happen).
