Hi each day my Quakers eat their pellets and veggies they also get fed pine nuts and pistachios. I realize that nuts are high in fat content and I'm wondering how many they should be fed per day

There don't seem to be any specific guidelines for the number of nuts to feed to parrots, except that they need to be fed sparingly, only as a treat. My two parrots get no more than three nuts a week, usually only half a nut at a time. Pistachios are lower in fat than most types of nuts, and they have good nutritional value too. Pine nuts can be fed more often; one a day is fine, but shouldn't be more than that.
