I was reading about people pureeing a bunch of veggies and then adding bits of this and that to it for their birds - anyone here do that?

I've done it from time to time, but neither parrot has been all that enthusiastic about it so far. Lots of parrots do like chop, and it can be a way to get them to eat things they might otherwise reject.

I’ve never tried a vegetable purée for Casey. I do make small batches of her favourite foods and freeze them in small servings for her dinner. Currently she is enjoying a mixture of pumpkin, broccoli, eggs, and rice

Ooh that sounds great!! Bilbo apparently loves scrambled egg so I've been giving him some as treats every day. Fun to watch him eat, as weird as that sounds, lol!!!

I make chop for Ollie, and I have since I got him as a baby. The breeder that I got him from recommended it because she makes it and feeds it to all of her birds. I put different things in every time I make it. Some times he eats it and sometimes he doesn’t. Depends on his mood I guess. I freeze small amounts in little ziplock baggies so I can defrost them and feed it when I want to.
